If you’re anything like me, you might remember the mushy and not exactly appetizing brussel sprouts of your childhood but this shredded brussel sprouts recipe takes the nutritional powerhouse and makes them truly delicious.

I have found that my family is much more likely to eat brussel sprouts when they are shaved/shredded due to the texture. I personally prefer them this way too. For years, I have bought my brussel sprouts pre-shredded at Trader Joes but I recently learned that my cheese grater has an attachment that’s great for shredding them at home. I’ve been doing this and it’s SO quick and easy. 

WHY THIS SHREDDED BRUSSEL SPROUTS RECIPE WORKS

Nutritious: I love serving a wide variety of fruits and veggies of all colors to my family, and these roasted brussel sprouts are a nutritional powerhouse full of antioxidants and other nutrients. 

Flavor: Roasting any vegetable brings out such a great depth of flavor. I personally like them quite charred but you may find you like them roasted but not quite so brown. You can also add your favorite seasonings to add flair to this basic recipe. I keep it pretty simple so the side can be paired with a number of different main dishes.

Minimal Ingredients: With just a bit of oil, some seasonings, and the sprouts themselves, this recipe requires little to no thought and very few ingredients – most of which you’ll already have on hand!

Hands Off Prep: If you’re buying pre-shredded brussel sprouts, you can just mix the seasonings and oil with the brussels and toss it all on the pan. Shredding them yourself takes a couple extra minutes but will likely save a bit of cash at the grocery store! Otherwise, the oven does all the work! 

For this shredded brussel sprouts recipe you can buy pre-washed and pre-shredded sprouts or wash and shred your own. Once I learned by cheese grater can shred them, I've been doing it that way ever since!

INGREDIENTS IN THIS CRISPY OVEN ROASTED BRUSSEL SPROUTS RECIPE:

  • Brussel Sprouts: This cruciferous vegetable is the star of the show. Buy them pre-shredded or shred your own using a rotary grater with a slicing blade attachment.
  • Avocado Oil: You can substitute this for the oil of your choice. I use avocado oil in almost every recipe because it has a lighter flavor than olive oil.
  • Seasonings: The base recipe is pretty simple with just salt, black pepper, garlic powder, and paprika to taste. You can certainly play around with this and add different twists. We love to top them with balsamic glaze and parmesan cheese or with Thai sweet chili sauce and soy sauce. 

HOW TO COOK THE SIMPLE OVEN ROASTED SHREDDED BRUSSEL SPROUTS RECIPE

  1. Preheat oven to 400.
  2. If using unwashed brussel sprouts, trim them, remove any damaged leaves, then shred or chop them.  You can use a cheese grater with slicing blade attachment, a food processor, or a sharp knife. I personally buy pre-washed brussel sprouts to save time! You can also buy them pre-shredded too!
  3. Toss brussels sprouts with avocado oil and seasonings and add to a large baking sheet lined with parchment paper or a silicon baking mat. It’s important to use a large sheet in order to give them plenty of space to brown and get crispy!
  4. Roast for approximately 30 minutes or until edges are crispy, tossing halfway through. Keep an eye on it and remove once it is browned to your liking. I like mine quite crispy so I often add a couple minutes under the broiler at the end.
As you can see, my grater shreds the brussels sprouts very finely. If you use pre-shredded brussels or chop your own, you may need additional baking time to get the best texture for this crispy roasted shredded brussels sprouts recipe.

SERVING SUGGESTIONS – WHAT TO EAT WITH BRUSSEL SPROUTS

This recipe can be served with any classic “meat and sides” type meal. Think meatloaf and mashed potatoes, roasted chicken, etc.

RECIPE VARIATIONS

Thai Inspired:

A local restaurant in our area offers a Thai style roasted brussel sprout dish that we love. We often mimic those flavors in this dish by tossing the roasted sprouts in Thai sweet chili sauce, a bit of sesame oil, soy sauce, and sesame seeds. It’s SO delicious and we love it served with salmon and rice.

Maple Dijon and Bacon:

Mix equal parts maple syrup, dijon mustard, and avocado oil and toss the raw sprouts in the mixture before roasting. At the end, add crumbled crispy bacon and stir. I served this version at Thanksgiving one year and the crowd went wild!

Salt and Vinegar Style:

Keep the recipe as is but add in a bit of vinegar (your flavor of choice) along with the avocado oil for a tangy flavor. I like apple cider vinegar and red wine vinegar. You can also add a pinch of sugar to tame the tang.

  • 112 oz package of halved brussels sprouts (can also use regular and chop them yourself)
  • 2 tsp Avocado oil
  • Salt, Pepper, garlic powder, and paprika to taste (1/4 tsp each)

Instructions

  1. Preheat oven to 400.
  2. If brussels sprouts are whole, shred or chop them. Can use a cheese grater with shredder attachment. 
  3. Toss brussels sprouts with avocado oil and seasonings and add baking sheet lined with parchment paper or a silicon baking mat. 
  4. Roast for 30 minutes or until edges are crispy, tossing halfway through. (Less time needed if shredded than if whole. Keep an eye on it and remove once it us browned to your liking. I like mine nearly burned.

Notes

Washing and shredding your own brussel sprouts saves money and ensures freshness; however, I LOVE the pre-washed and pre-shredded version from Trader Joes for a quick weeknight side dish.
