3-Ingredient Easy Cheesy Rotel Sausage Dip Recipe

Slightly spicy, extra cheesy, and super hearty this three ingredient dip combines just cheese, Rotel diced tomatoes with green chiles, and sausage. This dish is simple for sure but is ALWAYS a crowd pleaser everyone will be snacking on during any party. 

If you’re feeding kiddos like I usually am, stick with mild sausage and mild Rotel. If you’re making the dish for grownups feel free to go with hot sausage and regular Rotel. You can even add in some jalapeños or other hot peppers if you’re feeling extra spicy! 

This dish is SUCH a staple at gatherings where I grew up that I almost can’t remember attending a party that DIDN’T have it! Every single time I see it at a party, I’m sure to grab a bite no matter what else is served.

It’s delicious and filling and is great served with your favorite tortilla chips. While I typically prefer a thinner restaurant style tortilla chip, this dip is pretty thick and heavy so it’s best served with a thicker chip or a scoop style chip. 

WHY THIS ROTEL QUESO DIP RECIPE WORKS 

Crowd Pleaser: What’s not to love, right?! Cheese, sausage, and a bit of tomato with green chiles. Yum! Serve it warm straight from the crockpot with tortilla chips and everyone will be satisfied! 

Minimal ingredients: When you’re hosting or attending a party, the last thing you want to do is make super involved and stressful recipes .This dish only has three ingredients and couldn’t be easier to make. Perfect!

Easy: Simply brown your sausage, mix it with Rotel diced tomatoes, and cheese, then melt it. SO easy! I like to warm it in the crockpot and serve it directly from it to keep the dip warm. 

Crockpot or Stovetop: If you don’t want to make it in the crockpot, you can easily warm this dish on the stovetop. After browning the meat on the stovetop, you can even heat the dip up in the microwave if needed.

Game Day Fave: This is a great gameday appetizer. If you’re like me and are mostly into Football for the snacks… this is a good and simple recipe to add to your repertoire. 

Repurpose Leftovers: I can’t promise you’ll actually HAVE leftovers but if you do you can repurpose the dip into two dishes that I LOVE making. The first is Rotel dip mac and cheese. Simply boil some noodles and reheat the dip to use as your sauce. The second is a breakfast burrito. Simply scramble up some eggs, add some of the leftover dip, roll in a tortilla, and sear on all sides. Both are absolutely delicious! The burritos are also great for freezer meal prep. 

This Rotel sausage dip with velveeta utilizes two pounds of the cheese which is chopped into approximate 1" cubes.

INGREDIENTS IN THIS ROTEL SAUSAGE DIP RECIPE:

Sausage: I prefer using mild breakfast sausage to keep the spice level low for a crowd, but it’s also delicious with hot sausage. 

Rotel Tomatoes and Green Chilies: Again, I typically choose mild Rotel to ensure everyone will enjoy the dip but if you like spice… feel free to get the hotter version! 

Velveeta Cheese: Velveeta cheese is the perfect cheese for this dish as it’s melty and creamy. I have also had this dish made with cream cheese before and it’s also delicious. You could also do half Velveeta and half cream cheese if preferred. 

HOW TO MAKE CHEESY ROTEL SAUSAGE DIP (CROCKPOT):

  1. Add sausage to a skillet over medium heat.
  2. Crumble sausage into small pieces using a spatula or meat and potato masher. Cook until brown, approximately 5-7 minutes.
  3. Drain sausage and add to your slow cooker.
  4. Add in the Rotel and stir.
  5. Dice Velveeta into cubes and add to the slow cooker. Stir.
  6. Put the lid on your slow cooker and cook on high for 1 hour, stirring every 20 minutes.

HOW TO MAKE CHEESY ROTEL SAUSAGE DIP (STOVETOP):

  1. Add sausage to a large skillet or dutch oven over medium heat.
  2. Crumble sausage into small pieces using a spatula or meat and potato masher. Cook until brown, approximately 5-7 minutes.
  3. Drain sausage and add back to dutch oven.
  4. Add in the Rotel and stir.
  5. Dice Velveeta into cubes and add to the dutch oven. Stir.
  6. Allow cheese to melt, stirring frequently, for approximately 10 minutes. Serve warm.

SERVING SUGGESTIONS

This is a perfect appetizer to add to your spread served alongside any of your other favorite apps. Some of my favorites include spinach artichoke dip, bbq meatballs, and chicken wings. You truly can’t go wrong so serve it up with whatever you like!

Store in an airtight container for up to 3-5 days.

FREQUENTLY ASKED QUESTIONS:

Do I need to drain the Rotel?

No! The juices in the canned tomatoes go right into the dip!

What do I do if the dip is too thick?

This dip does thicken as it cools so if the dip is getting cold, you can warm it up to reach the initial consistency. If it’s warm but still too thick, you can add in a splash of milk at a time until your desired consistency is reached.
