COPYCAT PANERA BREAD TURKEY CHILI RECIPE (HEALTHY)

Description

Chock full of lean ground turkey, veggies, and SO much flavor, this hearty copycat Panera Bread turkey chili recipe will fill your stomach and warm your soul.


Ingredients

Scale
  • 1.25 pounds 97% lean ground turkey breast
  • 2T Avocado Oil
  • 1 small can kidney beans (15.5 oz)
  • 1 small can chickpeas (15.5 oz)
  • 1 Box Turkey or Chicken Broth
  • 1 Cup shelled edamame (thawed)
  • 2 10 oz cans of tomatoes with green chiles
  • One large onion diced
  • One large carrot diced
  • 1 6 oz can tomato paste
  • Lime juice to taste (2 T)
  • 1 can corn (15.25 oz)
  • 1 T Salt
  • 2T Cumin
  • 2T Chili Powder
  • 1T Onion Powder
  • 1T Garlic Puree
  • 1 tsp Rosemary
  • 1T Brown Sugar
  • 1 tsp pepper

Instructions

  1. Heat dutch oven or large soup pot to medium heat
  2. Add 2T avocado oil
  3. Add onion and carrot and saute until soft (approximately 5 minutes)
  4. Add turkey and cook through. Drain if needed.
  5. Add spices and tomato paste, mix and cook for 3 minutes.
  6. Add beans, corn, veggies, tomatoes, lime juice, and broth. 
  7. Simmer for at least 30 minutes – but the longer the better.
