Store bought rotisserie chicken is a life saver when you’ve got nothing for dinner and are sick of takeout but with around five minutes of prep time you can have your OWN at home rotisserie chicken any day of the week.

There’s nothing better than coming home from a long day and having dinner ready to go. This crockpot rotisserie chicken does that and so much more. Use the leftover juices to make your own homemade chicken stock for future recipes and shred your leftover chicken for use in quesadillas, chicken soup, chicken salad, casseroles, and more.

My favorite part is that you can use the juices and carcass to make your own delicious chicken stock! 

You can also change this simple base recipe up in many ways! Add lemon and garlic, add some spice, etc.

Minimal Prep Time and Hands Off in Crockpot

The prep time for this meal is less than five minutes. All you do is remove anything from the chicken’s cavity, pat it dry, top it with seasoning and toss it into the crockpot. From there the slow cooker does all the work in creating your delicious main dish.

INGREDIENTS:

Chicken: One whole chicken approximately 6-8 pounds. 

Rotisserie Seasoning Blend: Add McCormick Perfect Pinch Rotisserie Chicken Seasoning to taste or substitute with your favorite blend of seasonings. 

HOW TO MAKE THIS DISH:

  1. Remove any unwanted pieces from the cavity of the chicken (neck, organs, etc.). 
  2. Pat dry with a paper towel.  
  3. Place in an empty crockpot.
  4. Season liberally with rotisserie chicken seasoning.
  5. Cover and cook on high 4-6 hours or low 6-8 hours.
  6. Ensure chicken is cooked to 165 degrees.

At my local grocery store, a whole chicken is around half the price of boneless skinless chicken breast per pound. Once cooked, store any leftover chicken in a sealed container in the refrigerator. I personally choose to shred all of the chicken and store it in Tupperware containers with lids.  Then strain the juices and store in a mason jar with lid to use in soups, mashed potatoes, etc.
