Ingredients

1 can black beans, drained and rinsed

1 can pinto beans, drained and rinsed

1 red bell pepper, diced

1 jalapeño, minced (remove seeds for less heat)

1/2 red onion, finely chopped

1 can Rotel (diced tomatoes with green chilies), drained slightly

1 cup corn (fresh, canned, or thawed from frozen)

1 cup fresh tomatoes, diced

1/2 cup chopped fresh cilantro

Juice of 34 limes

1 tsp salt

1/2 tsp black pepper

1 clove garlic, minced (or 1/2 tsp garlic powder)

3 avocados (optional)

1/2 cup avocado oil


Instructions

  1. Prep your ingredients. Rinse and drain the beans, chop all vegetables, and juice the limes.
  2. Mix. In a large mixing bowl, combine the beans, bell pepper, jalapeño, onion, Rotel, corn, tomatoes, and cilantro.
  3. Season. Add lime juice, avocado oil, garlic, salt, and pepper. Stir well to coat everything evenly.
  4. Chill. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  5. Serve. Stir again before serving. Mix in avocado if using. Enjoy with chips or however you like!
