Description
The delicious flavors of your favorite beef enchiladas with the ease of a one skillet meal, these lady enchiladas are full of lean ground beef, tortillas, cheese, and enchilada sauce. With optional add-ins like onion, bell pepper, zucchini, and corn, this can be a full meal in only one skillet.

- 1.33 lb ground beef (90/10)
- 1 lg can old El Paso Enchilada Sauce (29 oz?)
- 8 oz cheese shredded (I typically use mild cheddar and shred it myself)
- 1 package flour tortillas cut into squares (can sub corn tortillas for more authentic flavor, but my family prefers flour)
- S+P to taste, onion powder, garlic powder, chili powder to taste
- Optional: diced onion, bell pepper, black beans, corn, rice
Instructions
- Cook and crumble meat on medium heat until brown.
- Saute any of the optional vegetables and warm beans if using.
- Chop tortillas into bite size pieces. I like to use a pizza cutter for this.
- Shred cheese
- Drain ground beef if needed, add tortillas, cheese, any optional vegetables or beans, and enchilada sauce to pan and cook until cheese is melted and enchilada sauce has slightly reduced, approximately 7 minutes.
